KITCHEN
Light filled, relaxing and classically elegant, Briars Bistro is a favourite haunt for locals and visitors alike. Set overlooking the picturesque Highlands backdrop, it’s the perfect spot to settle in for a long lunch or dinner with friends.
Briars Bistro menu is seasonal and generous, catering for whatever your appetite might call for. We serve large cuts of the finest prime aged beef, which pair perfectly with the best seasonally sourced, farmed produce. Our menu is designed to cater for shared experiences as well as offering more hearty meals, such as our signature Beef Cheek Pie for those looking for something more substantial. You mustn’t forget to leave room for dessert – our Sticky Date Pudding is to die for!
Or enjoy an outlook of the spectacular Highlands countryside in one of our alfresco dining areas where you have the choice of dining on our Bistro menu, eating a delicious hand-made pizza from our wood-fired oven or grazing on a charcuterie board throughout the afternoon.
BARS
When it come to our wines, there is plenty to choose from, we have an extensive list that we’ve thoughtfully sourced locally and from around Australia. They contain the bottles we love to drink and have been hand-picked to complement our menu.
We have an impressive range of English ales, craft & traditional beers on tap, classic cocktails, and high-quality champagne for any celebration! Our spirit’s list doesn’t disappoint with a wide range to choose from including a diverse list of gins and whiskies.
Grab a beer and sit amongst the trees in our outdoor areas, toast to a special occasion in our private dining rooms or cosy up with a whisky by the fire in historic Throsby’s Bar.
THROSBY'S BAR
Historic Throsby’s Bar takes its name from Briars’ founder Charles Throsby.
Tucked away within the Inn built by Charles in 1845, Throsby’s is a destination unto itself.
Step back into another time as classic drinks are poured while you soak up the atmosphere of warmly lit interiors, intimate areas, a fireplace, and bespoke vintage details which give a nod to the rich history and charm of the Inn.
There’s an extensive spirits list as well as classic cocktails and a large, hand-picked wine list that’s thoughtfully sourced locally and from around Australia.

WOOD-FIRED PIZZAS
Our authentic wood-fired pizzas are served from the Tin Shed located in our Beer Garden.
Available every Friday, Saturday & Sunday 12pm – 8pm, our pizzas are the perfect way to spend an afternoon soaking up the sun in the many outdoor areas with a drink in hand.
